Waffles are one of our favorite things to have for breakfast, and we make them quite often, even at dinnertime as part of a “breakfast for dinner” night! A few years ago I came across a fantastic Belgian Waffle recipe, and when a family friend gave me a waffle iron that makes waffles in the shape of animals- well I had to pair the two things together!

Homemade Belgian Waffle Recipe

I promise you- these at some of the best homemade Belgian waffles you will ever eat!

Ingredients

  • 1 cup cake flour
  • ½ cup all-purpose flour
  • 2 tablespoons sugar
  • 1½ teaspoons baking powder
  • ¾ teaspoon baking soda
  • 1½ cups ( a 16 oz. container) of sour cream
  • 3 large eggs, separated
  • 3 tablespoons of butter, melted
  • 1 teaspoon of vanilla extract

Instructions

  1. Sift together in a medium bowl both of the flours, sugar, baking powder, and baking soda.
  2. In another medium-size bowl whisk together the sour cream, 3 egg yolks, the melted butter, and the vanilla extract. Next pour the dry ingredients into the bowl with the sour cream mixture, and stir a few times to make a quick and lumpy batter.
  3. Using your electric mixer beat the 3 egg whites until stiff peaks form. Using a rubber spatula, fold the egg whites into the batter being careful not to deflate it.
  4. Preheat your waffle iron. (I always spray my waffle irons with a little bit of cooking spray so that the waffles won’t stick while cooking.) Add about a ⅓ cup of batter to each section of your waffle iron, and cook for the time as indicated. Serve warm with 100% maple syrup or a berry topping!
